What to look for
Any oven thermometer that reads in both °C and °F and costs over £5 will be accurate enough. The key is to actually use it — hang it in the centre of the oven and let the oven preheat fully (20-30 minutes, not just until the light goes out).
Frequently asked
How far out is a typical home oven?
Which? testing found the average error was 18°C above or below the set temperature. Some ovens ran 30°C hot consistently. This explains a huge number of 'it always overcooks/undercooks' complaints.
Does a fan oven run hotter?
Fan ovens circulate air, giving more even temperature and faster cooking. The standard rule is reduce fan oven temperature by 20°C vs conventional oven recipes, or reduce cooking time by 10-15%.
